Light Summer Recipes II – Berry Brunch

Berry French Toast

Take advantage of the seasonal fruit, especially berries for your summer meals. Here’s a simple brunch idea for those lazy Sunday’s.

French toast with berries and yogurt (one serving)

  1. 1 Large egg – beat in a bowl
  2. 1 Slice of bread (I prefer whole grain, heartier and healthier)
  3. 1 Teaspoon of butter
  4. A handful of berries, 1/2 pureed/chopped to mix with the egg – keep a few whole berries for dressing (blueberries, raspberries, strawberries, blackberries – wash/dry them)
  5. 1 cup of yogurt  – plain/vanilla (instead of whipped cream, which is often what you get at restaurants instead)

Method:

  1. Melt butter in a non-stick pan, spreading it evenly across the surface of the pan over medium heat
  2. When the butter is melted turn down the heat a little further, not to the point of low heat
  3. Soak bread evenly into the egg – berry mixture and place into the pan, cover with a lid and let it cook on both sides until the egg is cooked, but not burned (different depending on the heat of your stove)
  4. French toast is ready to be plated and served with a side of yogurt and fresh whole berries
